Carpaccio of scallops with white pepper from Costa Rica

 

Ingredients for the recipe:

  • 6 scallop meats (without coral)
  • 1 generous drizzle of extra virgin olive oil from Huilerie Beaujolaise
  • 1 lime
  • 1 yellow lemon
  • 2 pinches of white pepper from Costa Rica Terre Exotique
  • ½ pomegranate
  •  

Methods:

  1. In a plate, arrange thin slices of scallops.

  2. Drizzle with olive oil, add the zest of a yellow lemon, the zest of a lime, a few pomegranate seeds, and a few turns of the mill with white pepper from Costa Rica.
