Great wines of pepper
The pepper plant is not a tree but a vine that wraps around other plants. Only the fruits of species belonging to the Piper genus are entitled to be called "pepper."
The botanical family of Piper can be segmented as follows:
- Piper nigrum: it is the classic round pepper, the essential of our tables;
- the tailed peppers: such as the wild voatsiperifery pepper from Madagascar or the cubeb pepper from Indonesia;
- long pepper: like the Ethiopian timiz pepper, the long java pepper or the Indian assam pepper.
The degree of ripeness at harvest and the post-harvest process will give the pepper its final color and flavors.
