Wakame (Undaria pinnatifida) seaweed is an essential ingredient of Japanese and Korean cuisine. Its unique taste is very mild on your tastebuds. It is highly renowned for its high levels of protein, its wide range of amino acids and vitamins.

Before using, soak in hot water for 2 minutes or in lemon juice or diluted vinegar. 5g of dehydrated seaweed per person is enough to make a seaweed tartare or caviar. Treat yourself to this festival of colours, flavours and aromas. Wakame seaweed will enliven and enchant Miso soup, tofu salad, squash and chilli pepper soup, meat marinated in lime juice and coconut milk, guacamole or simply use it to create your own flavoured butter.

In the Far East (Japan, Korea, China), wakame seaweed has been harvested for centuries. It was brought to Brittany in the 20th century for cultivation. Seaweed in cooking is by no means a new phenomena. It was widely used by buddhist monks throughout the Far East and was thought to have been consumed in China as early as 2700 B.C.
