Our recipe ideas for using Cabernet Vineyard Expression pepper in your cooking:

· Wild boar stew with prunes: before serving, sprinkle ½ teaspoon of Cabernet Vineyard Expression pepper on your dish;

What does the Cabernet Vineyard Expression pepper contain?

The Vineyard blend consists of black pepper from Malabar, cubeb pepper, red pepper from Kampot, Batak berry, and white pepper from Penja.

The peppers in this blend

Malabar pepper comes from Thalassary, a city on the Malabar coast known as the "spice coast" located in southern India. The Malabar coast is the birthplace of pepper. It is the wettest region in southern India with exceptional lands. A true "spice paradise," it produces nearly 70% of India's spice production.

White Penja pepper also comes from Piper nigrum, which is a giant vine. It grows on a tree with rough, cracked bark that facilitates its climb, often up to four meters high. Its pollination is done by rain, frequent in the Moungo region. In Cameroon, the land is volcanic, rich, and fertile, allowing Penja pepper to be very concentrated in essential oils and aromas.

Growing in the hot and tropical climate of Salvador de Bahia, Brazil, Bahia black pepper like Bahia white pepper, comes from the species Piper nigrum, a vine that grows on a tutor. Also known as "Brazilian Bay" or "All Saints' Bay", Bahia black pepper grows in an idyllic setting, facing the ocean on sandy soil in the center-east of the country. It is drip irrigated to receive precisely what it needs in terms of water and nutrients.

Voatsiperifery pepper, on the other hand, comes from the Piperaceae family. It is the fruit of the Piper borbonense vine, which grows in the tropical forest in the southeast of the island of Madagascar. The etymology of its name comes from "voa," which means fruit, and "stiperifery," which is the name of a plant in Malagasy.

Batak berries are also called "Andaliman Pepper," "Batak Pepper," or "Intir Intir." They are harvested in the wild in the north of the island of Sumatra in Indonesia by the ethnic group of the same name, also called the "Toba people." They come from a spiny shrub: Zanthoxylum acanthopodium (a cousin of the shrub producing Szechuan peppercorns) growing at an altitude of 1500 m north of Tapanuli and Samosir, near Lake Toba. This region is nicknamed "the kingdom of the Bataks."
