Summer truffle mustard: a culinary discovery

Before being a spicy and flavorful paste, mustard is first the seed of black mustard (Brassica nigra). It takes at least 500,000 seeds and 3 major manufacturing steps to obtain 1kg of mustard.

Step 1: Grinding the seeds

Black mustard seeds are ground into a fine powder to start the mustard-making process. This step makes the seeds more easily workable later on.

Step 2: Mixing with verjuice

The ground seeds are then mixed with verjuice, an acidic juice from unripe grapes that adds acidity to the mustard and makes it spicier.

Step 3: Grinding and sieving

The mixture of seeds and verjuice is ground and sieved again to properly separate the seed hull from the resulting paste. This step is essential to obtain a smooth and homogeneous mustard.

Step 4: Maturation and packaging

After these steps, the mustard paste is left to mature for several days to lose its overly bitter taste when first produced. Finally, it is homogenized and packaged for consumption.

Summer truffle: a refined and delicate ingredient
