Sesame (Sesamum indicum) is one of the oldest spices grown for its oil. Widely used in oriental cuisine, sesame oil will add an exquisite taste to home-made bread or pizza dough, salads or a courgette bake. It releases its full aromas on sautéed potatoes, roast chicken or pork chops and is delicious in Thai dishes. Its toasted notes will delight bread, fish, avocado, mango and baked apples. In Asia, sesame seeds have been used for centuries for their medicinal virtues. Indeed, Hippocrates recommended a regular intake of sesame seeds for their outstanding nutritious properties.
Use it cold, as seasoning, or for frying in a pan or a wok.
