Details

This Cretan rosemary is grown on terraced farms, in compliance with organic agricultural standards, on mountains and hills overlooking the sea. It is then dried in traditional driers, which are open to the wind. This gives it its sweet, fresh and iodized notes.

 

It is harvested in summer, after blossoming, when the leaves are fully ripe.

After harvesting, the branches are hung up to dry in traditional driers for around 10 days. These driers are open on all sides to reap the benefit of the summer breezes. After this stage, the rosemary is cleaned, sifted, and wrapped ready for dispatch to your kitchen.

 

In Crete, it is very popular in fish recipes, marinades and goes perfectly with snails.

 

It can be used in both sweet and savoury recipes. It will enhance veal, poultry, lamb and is deliciously accompanied by wine, olive oil, garlic and thyme. Infuse it in milk to add a Mediterranean touch to your desserts.

 

Recipe idea: Chilled clementine soup with honey and rosemary

  • Zest a clementine, place in a saucepan with the rosemary and water. Boil for 2 seconds, remove from the heat, cover and leave to infuse for 10 mins.
  • Peel the clementines, leaving them whole then slice into 3 (keep the juice that comes from slicing them).
  • Pile the slices tightly into a bowl.
  • Pour the juice into the saucepan, melt in the honey, then pour this mixture through a sieve, onto the clementines. Sprinkle with a sprig of mint.
  • Cover and leave to chill for at least 2 hours before serving.
