Like most citrus fruits, the lemon tree comes from Asia, and more specifically from Kashmir – at the borders between China and India. The Persians brought them back from the Middle East, where it rapidly adapted to the climate of Mesopotamia. The Hebrews learnt to grow it probably during their period of captivity in Babylon. Whilst it appears that the ancient Greeks did not eat lemons, they used them during wedding celebrations. Lemons became more widely used due to the Arabs who planted them throughout the Mediterranean, as early as the 10th century. The Arabic “Li mûm” became “limon” when it arrived in Spain and then “lemon” in English and “lemonade”. The Spanish and the Portuguese took the lemon tree to Florida, where citrus fruits are now perfectly at home. Lemons are a very healthy fruit, refreshing and rich in vitamin C. Lime is a tropical fruit, full of flavour with distinctive aromas which will enchant your dishes and cocktails. Lime powder is obtained from drying and grinding lime peel. It has all the aromas of lime and is easy to use! Sprinkle it over a dish, in a drink, over your cakes and pastries, adding a new touch to your daily dishes with its exotic aromas. It is perfect for replacing fresh citrus fruits when you don’t have one handy when you’re cooking and can be used in unusual ways which would not have been possible with fresh fruit. Recipe ideas: Sprinkle a few pinches of lime powder in your cake mixture for madeleines, or in a milkshake to add a zingy taste to your desserts. 1 teaspoon with delight your mayonnaise or your vinaigrette. Add 2 to 3 teaspoons to a chocolate ganache, vegetable or meat stew. Sprinkle a few pinches over your fish just before serving, shellfish, scallops and even oysters to add a delicious acidic taste. Pan-fried scallops with lime powder: Ingredients: 16 scallops without their coral, 2 tablespoons olive oil, 1 small lump butter, lime powder, salt, pepper - In a large non-stick frying pan, heat the butter and the oil on a high heat. - Once the frying pan is very hot, place the scallops carefully in the pan and sear them for 1 min on the first side. Turn over and sear the other side for 1 min. Sprinkle with lime powder, season to taste. Serve the scallops immediately and enjoy!
