Parsley or Petroselinum crispum is part of the Apiaceae family. Its aromatic leaves are widely used in cooking although the roots are also eaten in central Europe. Parsley can be found all over the world and is also used for medicinal purposes. Parsley was also one of the plants grown widely on royal estates, and was cited in the "Capitulare de Villis vel curtis imperii" (a law which listed Charlemagne’s orders and recommendations to the governors of his estates). Recipe idea: Terre Exotique tortillas with courgettes and onions Ingredients for 4 people: 10 eggs, 4 small courgettes, 2 large onions, 2 garlic cloves, 1 tablespoon Terre Exotique parsley, 10 cl olive oil, salt and pepper - Rinse the courgettes, cut off the ends, then slice thinly. Peel and chop the onions and garlic. Beat the eggs in a bowl. - In a non-stick frying pan, heat 2 tablespoons of oil. Add the onions and heat gently for 10 min, stirring often. - Remove the onions from the heat and set aside. Add a spoon of oil in the frying pan and place the sliced courgette and garlic in the pan and cook over a medium heat for 8 - 10 minutes, stirring often. - Place the courgettes, onions and Terre Exotique parsley in the bowl with the eggs, season to taste. - Clean the frying pan, add the rest of the oil then pour in the eggs and carefully use a spatula around the edges as the eggs cook. - When the centre of the omelette starts to cook, remove the frying pan from the heat and carefully slide the omelette onto a large flat dish. Place the frying pan over the dish and turn over the omelette. - Return the frying pan to the heat to cook the other side of the tortilla for about 5 minutes. Slide onto a serving dish. Cut the tortilla into slices and serve hot or cold.
