  • le Piper nigrum : le poivre du moulin. C’est le poivre rond classique, l’indétrônable de nos tables ;
  • les poivres à queue : tels le poivre sauvage voatsipérifery malgache ou le cubèbe d’Indonésie ;
  • les poivre long : comme le timiz éthiopien, le long de java ou l’assam indien.

Le degrés de maturité à la récolte et les manipulations post-cueillette, donneront au poivre sa couleur et ses saveurs finales.
