How to get the best from your fleur de sel with roasted spices

Our recipe ideas for this fleur de sel with roasted spices:

 

·         Mashed potato with fleur de sel with roasted spices: add ½ teaspoon of fleur de sel with roasted spices to your mash just before serving;

·         Grilled king prawns with fleur de sel with roasted spices: sprinkle your grilled king prawns just before serving with a pinch of fleur de sel with roasted spices and a pinch of Timur berry. Serve with an avocado, sun- dried tomato and lamb’s lettuce salad;

·         Warm goat’s cheese canapés with fleur de sel with roasted spices: sprinkle a pinch of fleur de sel with roasted spices on your canapés and enjoy;

·         Chicken in cream and fleur de sel with roasted spices sauce: when almost cooked, sprinkle a few pinches of fleur de sel with roasted spices on your chicken then add cream and reduce;

Seafood platter served with fleur de sel with roasted spices flavoured mayonnaise

 

Ingredients

For the seafood platter:

12 clams;

500g winkles;

500g welks;

16 No.3 oysters;

12 No. 2 oysters;

2 crabs;

1 spider crab;

4 velvet crabs;

20 lobster tails;

200g pink shrimps;

200g grey shrimps;

 

For the flavoured mayonnaise:

2 egg yolks;

2 teaspoons mustard;

300ml sunflower oil;

2 pinches fleur de sel with roasted spices;

1 pinch cracked Timur berries.

 

Method

Prepare your seafood platter then make the mayonnaise. Place the yolks in a bowl with the mustard and beat with an electric whisk. Then add the sunflower oil very gradually, beating constantly, otherwise the mayonnaise will curdle. As soon as the mixture thickens add the fleur de sel with roasted spices and cracked Timur berries.

Place the bowl of mayonnaise in the middle of the seafood platter and indulge!

Madagascar fleur de sel, a delicate jewel from the salt ponds of Ifaty 



It is in Ifaty, in South-West Madagascar, that the salty marshes which produce this tasty salt are to be found. The seawater that fills these clay ponds evaporates due to the sun and the wind. This fleur de sel is so delicate that it is carefully collected by hand and not by rake, thus maintaining its light fluffy texture without damaging it.

 

 

Tasty spices that are used in curry



Terre Exotique’s exclusive recipe was inspired by traditional recipes from La Reunion, where the local women always start their dish by roasting a selection of spices before adding their personal touch. The spices we chose are similar to those used in curry: coriander, sesame, garlic, fenugreek, and cumin. When roasted, their aromas change and develop more complex flavours. Cumin, for example, loses its bitterness to release woody notes. All the flavours of La Reunion at the tip of your fingers!

 


Where does this fleur de sel with roasted spices come from? 

 

This flavoured fleur de sel comes all the way from Madagascar to the Touraine region in France 

 

It all starts with the salt ponds of Ifaty, a heavenly spot in South-West Madagascar. These lagoon-like marshes are the land of the semi-nomadic Vezo fishermen. When the fishing season comes to a close, they turn to producing fleur de sel. The local people use expert traditional processes to collect this precious treasure by hand. When it arrives in Touraine, in central France, it is mixed with the roasted spices in our workshop where the spices are toasted and roasted. Then they are sorted in small quantities to ensure they stay fresh. 

An exclusive creation in partnership with the salt farmers of La Reunion 

 

This fleur de sel with roasted spices is undoubtedly one of Terre Exotique’s emblematic products. After Erwann de Kerros brought Penja pepper back from Cameroon, what he needed was a delicious salt! He met some salt farmers who had just set up in La Reunion. What better companion for his Penja pepper, than fleur de sel mixed with traditional roasted spices from La Reunion!
