You can use Kari-Brest in several ways. Add it to cooked dishes at the beginning of cooking over high heat with oil and onions before adding fish or vegetables. Alternatively, use it as a finishing touch in mayonnaise, on salads, or meats.

Be cautious, as this blend is rich in aroma and quite spicy: use sparingly, unless you're a seasoned corsair!

At Terre Exotique, our favorite trick with Kari-Brest is adding a teaspoon to homemade mayonnaise to accompany seafood.

Our Recipe Ideas to Use Kari-Brest in Your Cooking:

· Lobster with Kari-Brest: sprinkle 1 teaspoon into your sauce towards the end of cooking.

· Mussels with Kari-Brest: prepare by adding 1 teaspoon to the tomato sauce before adding the mussels.

· Langoustines with Kari-Brest: melt 1 teaspoon in your melted butter before frying the langoustines.

· Marinated Chicken with Kari-Brest: sprinkle half a teaspoon into your marinade.

· Scallops with Kari-Brest: add a touch of Kari-Brest to your melted butter before cooking the scallops.

· Monkfish tail with Kari-Brest: sprinkle 1 teaspoon of Kari-Brest into the white wine deglazed with tomato concentrate.

Scallops Recipe with Kari-Brest Sauce


4 scallops per person;

25 gr of salted butter;

A touch of Kari-Brest.

The realization

Heat your skillet over medium heat and melt the butter, adding a touch of Kari-Brest, and once the skillet is hot, add your scallops.

Cook for 1 minute on each side, during cooking, drizzle with butter.

Serve your scallops on a bed of leek fondue, white rice, or with fresh tagliatelle.

Our tip: pierce the coral of your scallops with the tip of a knife so that it does not burst under heat.
