Bird chilli, or Pili-pili is one of hottest chilli peppers in the world. This little red chilli pepper is harvested in Uganda (“the pearl of Africa”). Its botanical name is Capsicum frutescens and it’s part of the Solanaceae family. It is also grown in Madagascar, Congo and Zanzibar.
It rates 10/10 on the Scoville scale (volcanic), and releases very strong and sweet flavours. Perfect for spicing up sauces, rougails, grilled meat, pan-fried vegetables and soups.
Add it whole in your stews (careful, no more than 1 chilli pepper!) or in your pizza oil.
Avoid touching it with bare hands, and try and use gloves. Avoid all contact with eyes.
