The story behind coconut oil: The coconut palm is one of the oldest trees in the world. Coconuts were brought back from South-East Asia by Marco Polo who named it the "Pharaoh’s nut". He described it as a delicious fruit, sweet like sugar and white like milk. He marvelled in its dual use as a drink and food.
Coconuts are wanderers by nature. After growing on the tree for 6 months, they drop from the tree, then float due to the fibrous nature of their shells which contain lots of air and sail away from island to island.
Coconut oil production : Coconut oil comes from cold extraction of the fresh flesh of coconuts based on the following process:
- The flesh is grated into very thin strips
- They are then dried rapidly at an even temperature at 27°C
- hey are then cold pressed in a screw press.
Coconut oil is extremely stable with an unlimited shelf life. If kept below 22°C it solidifies.
Recipe ideas: Coconut oil can be used in a wide range of dishes: served with raw delicate flavoured fish, or use it to fry beef or chicken with coriander and coconut. Coconut oil can be used instead of butter in a chocolate cake.
