Colombo, an iconic spice blend in Antillean cuisine, traces its roots back to the late 19th century during the British colonization and the arrival of immigrant workers from East India, known as "coolies". Gradually, the imported curry evolved into colombo, adopting spice adjustments and dosages to suit local Antillean preferences. The name "colombo" originates from the economic capital of Sri Lanka, thus evoking its initial connections. This city itself seems to be named in honor of the famous explorer, Christopher Columbus.

How is Colombo Paste Made?
