Arabic gum is a natural additive, widely used in cooking. It results from the flow of the sap of acacia. The oldest of the food gums has no taste and is odorless. Its properties make it an excellent emulsifier or texturizer. Use in desserts and pastries such as marshmallows, loukoums or fruit jellies. Dosage: 10g to 50g for 100ml of preparation.
