In the southwest of Madagascar, in Ifaty, are the salt flats that give this tasty salt. The seawater contained in these clayey basins evaporates under the joint action of wind and sun. The fabulous result gives this fleur de sel that is not collected with a rake, but is picked by hand with great delicacy. This is how its light and airy texture can be preserved without breaking it.

Wild garlic, a treasure of the forest

Wild garlic, also called ramsons or wood garlic, is a perennial herbaceous plant of the Amaryllidaceae family, like shallots. It is therefore a bulbous plant whose botanical name is Allium ursinum. Wild garlic owes its name to the fact that bears, at the end of their hibernation, look for this plant to purge themselves.

In the past, wild garlic was considered a magical plant! It was said that if a pregnant woman put wild garlic in her pockets, the birth of her child would be protected. The second legend about wild garlic is an explanation for its name. According to a mountain legend, wild garlic is the first thing that bears would eat when coming out of hibernation, a symbol of the arrival of spring.

Madagascar's fleur de sel and its history

The nickname for the Island of Madagascar is "Africa with Asian eyes." Its salt pans are located far from any pollution, in Ifaty, in the southwest of the island. Since ancient times, the fleur de sel of Ifaty has been harvested by the Vezo, an ethnic group of fishermen living on this side of the island. Originally, this group lived off fishing, but gradually the island's resources dwindled, so they began to harvest the pure and immaculate fleur de sel of Ifaty, as they alone possess the expertise for this harvest.
