



In the 10th century, the Benedictine monks transformed the marshes of the isle of Noirmoutier into salty marshes, dewatering technique. Nowadays, the island has more than 3,000 salt ponds farmed by around 100 salt farmers. The salt is harvested by hand. Most of the salt is sold to the Noirmoutier cooperative of salt farmers. A thin crust of white crystals forms on the surface of the salt ponds when the water evaporates due to the sun and the wind. The quality of this fleur de sel is due to the way it is carefully collected by the salt workers and how it is dried and stored.
