This fleur de sel from Camargue comes from the formation of salt crystals on the surface of salt ponds. It has a light and slightly crunchy texture. Its pink colour and scents of violet come from Dunaliella sallina, a reddish micro-algae found in salty marshes.

Camargue and particularly the town Aigues-Morte has been a salt producing area since Ancient times (6000 B.C.).
