Grey chanterelles are harvested in autumn in the forests. This funnel-shaped mushroom, also known as Craterelle or Grey Chanterelle, grows in clusters and in large quantities in the Landes region and many mountainous areas of France.
Its fruity flavor is reminiscent of apricot. When used in terrines, stuffings, or sauces, it brings a delicate and woody taste to your recipes.
Soak the dried mushrooms in a bowl of warm water for at least 15 minutes. Drain them, then boil them for 1 minute. Your mushrooms are now ready to be used in your chosen recipe.
