





What is Maffé sauce?
Maffé is the traditional Senegalese recipe, the one with which the Mom Koumba adventure began. Maffé sauce is made from peanut paste and tomatoes, gourmet flavours spiced up with cabbage, peppers, carrots, cassava. On the spice side, black pepper and nététou were selected.
How can Mom Koumba's Maffé sauce be used?
Traditionally cooked with poultry or fish, to which the sauce is added, then served with rice. With the Mom Koumba recipe, all you have to do is add the sauce directly to your dish. For a less traditional use, but still with as much flavour, prepare the Maffé sauce with semolina, rice, as a base for quiche, or other recipes as you wish. As the sauce is a little thick, you can dilute it with an equivalent volume of water to make it smoother.
