What is DoroWat sauce?

From Ethiopia, this delicious recipe is sure to make you travel. Literally "doro" meaning chicken and "wat" meaning stew, Doro Wat is a traditional dish of the country, usually reserved for special occasions. It is a chicken stew with a mixture of mead, giblets and eggs, often served with injera, a traditional Ethiopian bread. Tomatoes, onions, ginger, garlic and Berber spices are simmered together to make this smooth, tasty sauce, similar to a traditional tomato sauce. Tedj, an Ethiopian mead flavoured with gersho leaves, is added to the sauce, and the process of making it is similar to our chouchenn.

Make your own traditional Doro Wat with this ready-to-use sauce. Follow your usual recipe, then when it's time to add the tomatoes and spices, add Mom Koumba sauce instead! With this new format, you can add delicious Ethiopian flavours to all kinds of everyday dishes : pasta, rice, semolina, or on a slice of oven-roasted cauliflower. Simply heat for a few minutes before eating.
