What an exquisite citrus fruit !
Combava comes from the Sonde Islands in Indonesia. It was introduced by Pierre Poivre to the Indian Ocean at the end of the 18th century. Its name comes from its native island, Sumbawa. This combava plantation benefits from remarkable conditions as it is located along the Manantsatrana river in Madagascar.
Combava is a citrus fruit with a distinctive aroma, similar in aspect to lime, but smaller and more acidic. That's why its peel and leaves, rich in essential oils, are widely used. The zest is dried and ground down to a powder. Its mesmerizing aroma with notes of verbena, lemon grass, ginger and coriander is powerful and unique.
Its intense flavour is remarkably fresh and is delicious with fish, poultry and stocks.
