Cocoa bean chips
Grué is in fact crushed roasted cocoa beans. It adds a crunchy texture and strong chocolate flavor to cookies, ice cream. You can also just sprinkle them over a chocolate mousse. Try it on a meat and create your cocoa nibs rub. Cocoa nibs can be used in a savory side too. It can be added in the tagine for example, in a spiced lamb sausage or fried calamari.
