Sweet’n’sour chilli sauce
Sweet’n’sour chilli sauce is used in Chinese cuisine and mainly in the province of Hunan.
It is also widely used in Creole cuisine and even in European dishes, so here’s a recipe to make your very own version of this delicious very popular spicy sauce.
Ingredients for the recipe:
- 100 g sugar;
- 15 cl water;
- 1 tablespoon white wine vinegar;
- 4 g salt;
- 1 tablespoon Nuoc-Mâm Vietnamese fish sauce;
- 5 garlic cloves;
- 8 g cornflour;
- 1 teaspoon Terre Exotique French ground spangles chilli pepper.
Methods:
- Start by chopping your garlic then add the ground chilli pepper and the salt.
- Place in a saucepan with the sugar, Nuoc-Mâm Vietnamese fish sauce and white wine vinegar.
- Bring to the boil then leave to simmer for 5 minutes.
- Then add the cornflour and some water and whisk to obtain a thick consistency then remove from the heat.
- You can keep this sauce in an airtight jar in the fridge. It is perfect for seasoning your spring rolls, samosas or chicken wings!
