Recipe for Chilled Zucchini and Basil Soup with Vegetable Base


Ingredients for the recipe:
- 1 onion
- 3 zucchinis
- 1 tablespoon of vegetable base (25g)
- 800 ml of water
- 1 bunch of fresh basil
- 1 plain yogurt
- (Optional) A few diced feta cubes
Preparation:
- Finely chop the onion and sauté it in a saucepan with a drizzle of olive oil until translucent.
- Add the sliced zucchinis, then incorporate the vegetable base and water.
- Let simmer over low heat until the zucchinis are tender (about 15 minutes).
- Add the basil leaves at the end of cooking.
- Blend everything until smooth and creamy.
- Incorporate the plain yogurt, mix well, then refrigerate for at least 2 hours.
- (Optional) Before serving, add a few diced feta cubes for extra indulgence.
Tips:
- You can also add a potato for even more creaminess (allow additional cooking time in that case).
- Serve this soup well chilled, topped with a few fresh basil leaves for a colorful and refreshing touch.
