Cold zucchini and basil soup with its vegetable base

Recipe for Chilled Zucchini and Basil Soup with Vegetable Base

Ingredients for the recipe:

  • 1 onion
  • 3 zucchinis
  • 1 tablespoon of vegetable base (25g)
  • 800 ml of water
  • 1 bunch of fresh basil
  • 1 plain yogurt
  • (Optional) A few diced feta cubes

 

Preparation:

  1. Finely chop the onion and sauté it in a saucepan with a drizzle of olive oil until translucent.
  2. Add the sliced zucchinis, then incorporate the vegetable base and water.
  3. Let simmer over low heat until the zucchinis are tender (about 15 minutes).
  4. Add the basil leaves at the end of cooking.
  5. Blend everything until smooth and creamy.
  6. Incorporate the plain yogurt, mix well, then refrigerate for at least 2 hours.
  7. (Optional) Before serving, add a few diced feta cubes for extra indulgence.

Tips:

  • You can also add a potato for even more creaminess (allow additional cooking time in that case). 
  • Serve this soup well chilled, topped with a few fresh basil leaves for a colorful and refreshing touch.
