Smoked curry Gazpacho


Ingredients:
- 6 ripe tomatoes
- 1 red bell pepper
- 1/2 cucumber
- 1 small garlic clove
- 1 small red onion
- 3 tablespoons extra virgin olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon smoked curry
- A pinch of fine salt
- Kampot black pepper
- Cold water
Préparation :
- Peel (optional) and deseed the tomatoes. Deseed the bell pepper, and peel the cucumber, onion, and garlic.
- Cut all the vegetables and place them in a blender. Add the smoked curry powder, vinegar, olive oil, salt, and pepper. Blend thoroughly until smooth. Thin the mixture with a bit of cold water to your desired consistency.
- Adjust the seasoning to taste — especially the smoked curry, salt, and vinegar.
- For an ultra-smooth texture, strain through a fine sieve or chinois.
- Chill in the refrigerator for at least 2 hours before serving cold.
