Salted butter and Breizh curry caramel topping


  • 0,5 L whipping cream;
  • 100 g soft butter ;
  • 200 g caster sugar ;
  • 1 box of Breizh curry Terre exotique 
  • 3 cracker choux buns (this recipe focused on the caramel preparation only. Cracker choux buns have to be purchased/done already).


  1. In a pan, color up the sugar until it becomes a caramel.
  2. Deglaze the whipping cream 3 times and boil 5 minutes over a high heat.
  3. Leave from heat and sprinkle with a teaspoon of curry. Then, add the butter in slices.
  4. Vigorously mix up, pour onto the choux buns
  Tips: serve slightly warm with a few fleur de sel.
