Roasted Pineapple with Mexican Rubs


  1. Preheat your griddle.
  2. Remove the skin and core of the pineapple. Cut the pineapple into cubes.
  3. Caramelize the brown sugar and then mix the caramel with the pineapple cubes.
  4. Add the Mexican Rubs blend and mix again. Sauté the pineapple on the griddle for 5 minutes, covered.
  5. Enjoy it as a dessert or as a side dish with rice and grilled dishes.
  Chef's tip: For decoration, you can add some pistachios.
