Roasted Pineapple with Mexican Rub


Ingredients for the Recipe:
- 1 pineapple;
- 1 pod of Bourbon vanilla from Terre Exotique;
- 2 teaspoons of Mexican rub blend from Terre Exotique;
- 100 g of brown sugar from Terre Exotique.
Preparation:
- Preheat your plancha. Remove the skin and core from the pineapple, then cut it into cubes.
- Caramelize the brown sugar and mix it with the pineapple cubes.
- Add the Mexican rub blend and mix again.
- Sauté the pineapple on the plancha for 5 minutes with the lid on.
- Enjoy as a dessert or as a side with rice and grilled meats.
Chef’s tip: for decoration, you can add a few pistachios.
