Roasted Pineapple with Mexican Rub

 

Ingredients for the Recipe:

Preparation:

  1. Preheat your plancha. Remove the skin and core from the pineapple, then cut it into cubes.
  2. Caramelize the brown sugar and mix it with the pineapple cubes.
  3. Add the Mexican rub blend and mix again.
  4. Sauté the pineapple on the plancha for 5 minutes with the lid on.
  5. Enjoy as a dessert or as a side with rice and grilled meats.

Chef’s tip: for decoration, you can add a few pistachios.
