Pork tenderloin marinated in Kerala Curry paste and grilled spiced fleur de sel


Ingredients for the recipe:
- 2 pork tenderloins
- 2 onions
- 1 to 2 tablespoons of Kerala curry paste
- 2 tablespoons of olive oil
- 2 tablespoons of sweet soy sauce
- 2 tablespoons of crème fraîche
- A pinch of grilled spiced fleur de sel
- Pepper
Preparation:
- Coat your pork tenderloins with Kerala curry paste, olive oil, sweet soy sauce, and grilled spiced fleur de sel.
- Let marinate for at least 1 hour.
- Optionally, grill the tenderloins on the barbecue, or sear them for a few minutes in a pan, then place them in the oven at low temperature (70/90°C) for about 1 hour.
- Meanwhile, prepare the sauce by sautéing the onions in a drizzle of olive oil.
Incorporate the Kerala curry paste, sauté for about 30 seconds, then add the crème fraîche and mix until the sauce is smooth. - Simmer for 3 to 5 minutes over low heat.
- Once your tenderloins are ready, let them rest for 10 minutes, then slice them.
- Serve hot, accompanied by vegetables or potatoes, and top with your homemade sauce.
