Marinated salmon with green tea and coriander
Ingredients for the recipe :
- 1 kg salmon;
- 1 lime;
- 20 g green tea;
- 2 teaspoons Terre Exotique French coriander seeds;
- 70 g Terre Exotique brown sugar;
- ½ teaspoon Terre Exotique Timur berry;
- Terre Exotique Lesbos olive oil;
- 2 teaspoons Terre Exotique Ile de Ré fleur de sel.
Method :
- Start by rinsing the salmon then dry with kitchen paper.
- Grind the coriander seeds in a pestle and mortar then add to a bowl with the salt, sugar, green tea and lime zest.
- Place the salmon in a dish then cover with the lime juice and a drizzle of olive oil then spread the green tea and coriander mix over the salmon.
- Leave to marinate for 24h in the fridge – don’t forget to turn the salmon over at least twice.
- Slice thinly then serve on slices of buttered bread with pre-dinner drinks or as a starter.
