Hot chicken colombo
Colombo is the West Indies curry. It is a spice blend similar to curry or massala but it is also a traditional Indian dish which is very popular in the French West Indies since the 19th century.


Ingredients for the recipe:
- 1 whole chicken cut into pieces;
- 6 potatoes;
- 1 onion;
- 1 sprig parsley;
- 1 sprig fresh thyme;
- 1 bay leaf;
- 1 lime;
- 1½ teaspoon Terre Exotique colombo;
- ¼ teaspoon Terre Exotique West Indies chilli pepper;
- 3 tablespoons Terre Exotique Lesbos olive oil.
Methods:
- Start by washing, peeling and chopping the potatoes.
- Then chop the onion and fry in a casserole dish in some olive oil.
- Add the chopped parsley and fry for another minute.
- Add the chicken pieces and fry for a further 3 minutes then add the potatoes and the colombo, bay leaf and thyme.
- Add the lime juice and a glass of water.
- Mix well then sprinkle the West Indies chilli pepper over the top.
- Cover and leave to simmer over a low heat for 1 hour.
- Serve with rice to sooth the heat of the West Indies chilli pepper.
