Hollandaise Sauce recipe with Terre Exotique Halen Môn salt


Ingredients for the recipe:
- 3 egg yolks;
- 200g butter;
- 2 tablespoons cold water;
- juice of ½ a lemon;
- 1 twist of your pepper mill filled with Terre Exotique black Madagascar pepper;
- 2 pinches Terre Exotique Halen Môn salt.
Methods:
- Whisk the egg yolks with the cold water in a bowl.
- Place this mix in a double boiler and continue to whisk until you obtain a light and creamy consistency.
- Add the butter in small pieces and continue whisking.
- Remove from the heat and add the lemon juice, black pepper and Halen Môn salt. Whisk and serve immediately.
- This sauce is ideal served with soft boiled eggs, on fish or even asparagus – enjoy!
