A journey through the land of peppers in a gift box

Our travels led us to select outstanding peppers and berries from producers in Cameroon, Nepal, the Bataks and Ethiopia. They offer an extraordinary palette of wondrous new flavours: whether it be sweet, spicy or fruity with notes of menthol or camphor, you'll find them all in this gift box.

LIST OF GRAND CRU PEPPERS

"The tasting methods used for pepper are similar to wine tasting techniques. Clearly organised, methodical tasting techniques for pepper and research into pepper are relatively recent. Attempts to rationalize these new pepper tasting techniques, creating an aromatic profile for each botanical family and a scale to identify the strength, heat and intensity using the Scoville scale, are still at their early stages." PEPPERS AND THE PESTLE AND MORTAR – THE PERFECT MATCH

The pestle and mortar have been used since Ancient times by apothecaries and herbalists and it’s the perfect tool for crushing peppercorns. It can also be used to prepare spices mixes or for grinding berries, seeds and other wild pods … Unlike a pepper mill, a pestle and mortar is very durable and can be easily cleaned. It’s both universal and timeless, you can find it on every continent and it’s used by every civilisation.

To restore pepper to its rightful rank, we invite you into Michelin star chef, Didier Edon’s kitchen at Les Hautes Roches restaurant in Rochecorbon (37). Didier is a fervent enthusiast of the Touraine region which he has fully adopted while maintaining the traditional flavours of Brittany, his native region. He enjoys “land and sea” alliances and revels in the local products from our rich soils served with the fine wines of the Loire region.
