Terre Exotique's creme brûlée recipe

TERRE EXOTIQUE'S CREME BRÛLÉE RECIPE

4 people | Preparation: 20 minutes | Cooking: 40 minutes

INGREDIENTS FOR CREME BRÛLÉE

  • 25cl full fat milk
  • 25cl cream
  • 5 egg yolks
  • 75g muscovado sugar
  • 1 pod Madagascar vanilla
  • 1 pinch of star anise
  • clove
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 1 teaspoon turmeric

PREPARATION

  1. Heat the milk with the vanilla and star anise in a saucepan with a lid.
  2. When it boils, remove from the heat and leave to cool.
  3. Heat the oven to 140°C
  4. In a bowl, beat the egg yolks with the sugar.
  1. While mixing, gradually add the cream to the warm milk. Add the cinnamon and turmeric which will give it a warm golden color.
  2. Pour the mixture into earthenware dishes and bake for 40 minutes at 140°C. Leave to cool and refrigerate for at least 6 hours.
  1. Sprinkle with brown sugar and caramelize with a branding iron or kitchen blowtorch.
