Black Penja pepper is harvested before fully ripened then dried in the sun, in the province of Moungo. The expert hands of the local Cameroon women sort the peppercorns, one by one. The volcanic soils of Penja give the black pepper its aromas of camphor, incense and leather. Its acidic spiciness and bite bring to mind the tannic bouquet of red wine.
