Garlic is a plant from the Liliaceae family which is a bulb made up of several cloves (surrounded by a husk). A head of garlic is made up of “cloves”. The flowers of the garlic plant are also edible. Originally from Central Asia, garlic has been used in the Mediterranean for more than 5,000 years, particularly in Egypt. It is renowned the world over for its many healthy properties and delicious and taste. Ground down to a semolina, this dried garlic is sold in a metal tin, which protects it from the light and humidity. Although it may not be as strong as fresh garlic, it is still full of flavour. You can also grind it to a powder with a pestle and mortar or a salt mill. Be careful, garlic doesn’t like the damp! Garlic has a very strong smell and flavour. It can be slightly bitter or even acrid if it is left to age. Garlic is a flavour enhancer like many other spices and will enchant your dishes and give distinctive notes to salads, sauces and Provencal cuisine. Garlic is also renowned for its medicinal virtues.
